Strata worked closely with the owners of the Local Kitchen from an early stage to strategize, plan, and build a functional and inviting space that would give them a solid foundation to launch their business.
Project Details
The project involved installing three commercial kitchens, retail area, office, and two washrooms into a space of approximately 1500 square feet. Since space was at such a premium, our in-house interior design team had to work closely with the kitchen equipment supplier and the duct work designers to ensure every component would fit. Approximately 20% of the concrete slab had to be cut out to accommodate plumbing for eight sinks, two toilets, several floor drains and a dishwasher.
Two of the kitchens are industrial style geared toward large batch cooking seen in catering or food truck applications. The third kitchen is a demonstration kitchen, tastefully designed and decorated for events, cooking classes, and a place to learn about all things food. A glass wall separates the two distinct areas and adds a sophisticated touch to the entertaining area which features a large eating table lit by pendant light fixtures hanging from a dropped ceiling.
The kitchen ventilation system includes three hoods connected to four exterior fans and two make up air units which all work together to keep the air clear. This system by CaptiveAire automatically senses the grill temperature and modulates the variable speed exhaust fans so they remove only as much air as needed. To replace the air that is exhausted outside, the make up air units automatically fire up to heat the incoming fresh air.
Strata was responsible for the Interior Design and Construction Management services for this project. Construction started in mid September 2016 and wrapped up in January 2017. The Local Kitchen commenced operations in January 2017.
